Caramel Furanone (Sotolone®) is a powerful synthetic aromatic compound belonging to the furanone class, with a unique gourmet profile featuring intense caramel and fruity notes. This ingredient was first identified in 1965 as a key component of strawberry and pineapple aromas, and has since become an indispensable tool in the arsenal of modern perfumers.

The peculiarity of Caramel Furanone lies in its olfactory transformation depending on concentration. At high concentrations, it exhibits intense notes of burnt caramel, roasted sugar and pyrogenic undertones. However, when properly diluted (below 0.1%), its true beauty is revealed: the sweet aroma of cotton candy, strawberry jam and cooked pineapple with a characteristic fruity-gourmand depth.

Thanks to its exceptionally low perception threshold (only 10 ppb) and outstanding persistence (up to 360 hours on a blotter), this component provides a long-lasting presence in the composition even at minimal dosages. Its thermal stability and ability to create synergistic effects with other sweet molecules make it a valuable tool for creating multi-layered gourmet compositions.
